Best! Semi-Homemade Banana Bread.



Who doesn't love warm banana bread slathered in butter. I do! Especially when sprinkled with a pinch of finishing salt! Unfortunately, most banana breads, whether bought or homemade, are dry and somewhat coarse textured. I have not found a recipe that consistently produces a moist, soft crumb banana bread that I can say is the best... until this one.


The not so secret ingredient may surprise you...


I'm never opposed to short cuts that don't compromise quality or taste! With one essential tweak to the recipe on the box, Chiquita Banana Bread Mix will give you a REALLY great banana bread, that takes about 5 minutes from box to oven, with super easy clean up.


The key is to freeze two ripe bananas ahead of time. Pull them out of the freezer a couple of hours before making the banana bread, and let them thaw. Don't be put off by the color of the skin, or texture of the thawed banana. Freezing will cause the pulp of the banana to break down, and will also release the sugars. You'll end up with a sweet, mushy, liquidy banana that's perfect for easily stirring into a batter with a mixing spoon. No cutting, mashing or beater necessary. The thawed banana will also add needed moisture to your bread.



Gather all three ingredients. I know, I love that too. And it gets better.



Put them all in a bowl and stir with a mixing spoon until just mixed. About a 30 seconds. The batter will be slightly lumpy. That's it.



I make cleanup super easy, by using the bag inside the banana bread box as the trash container for the egg shells and banana peels. Take a quick minute at this point to toss the bag in the trash, put the box in the recycling bin, and set the fork and small bowl in the sink for final clean up.



Now, pour the batter into a greased or sprayed loaf pan and cook for 35-45 mins. I start checking at 30 mins.



Remove when baked and let cool long enough to handle. Transfer from pan by tipping upside down. Cut with a sharp serated knife and spread with butter. I also love it with a sprinkle of salt.

2 Bananas frozen then thawed

2 Eggs Beaten

Chiquita Banana Bread Mix


1. Preheat oven to 400 degrees.


2. Put all ingredients in a bowl and stir with a mixing spoon until just mixed. About a 30 seconds. The batter will be slightly lumpy.


3. Pour the batter into a greased or sprayed loaf pan and cook for 35-45 mins. I start checking at 30 mins.


4. Remove when baked and let cool long enough to handle. Transfer from pan by tipping upside down.


5. To serve cut with a sharp serrated knife and spread with butter. I also love it with a sprinkle of salt.
