Gram's Vanilla Pound Cake.

This moist, delicious pound cake is great on its own, and is also a great basic to add your own twists and toppings to. Its soft crumb and light buttery flavor make it a perfect compliment to an afternoon cup of coffee or tea. And, for those who love a sweet treat, adding a simple sugar glaze would certainly satisfy.



MAKE IT.

Ingredients:

1¾ cups sieved All Purpose flour

2 Tsp baking powder

¼ Tsp salt

¾ Cup softened butter

¾ Cup sugar

⅓ Cup Milk

⅓ Cup Coconut Milk

2 Large eggs (lightly beaten)

1½ Teaspoons Vanilla Extract


Pre-heat oven to 325°



Step 1.

Mix baking powder and salt into sieved flour with a fork. Set aside.


Step 2.

Lightly beat 2 eggs. Set aside.


Step 3.

Place softened butter and sugar into your mixer or a large mixing bowl. Mix on medium speed until butter mixture is pale yellow, light and fluffy, (about 1-2 minutes).


Step 4.

Turn mixer to low speed and slowly add lightly beaten eggs. If mixture starts to split, add a spoonful of flour mixture and continue. Add vanilla, half the flour, and milk. Mix until flour is incorporated. Mix in coconut milk and turn mixer off. Gently fold in the last half of the flour.


Step 5.

Transfer the batter to a buttered loaf pan. (I also line my pan with parchment paper for easy release and removal).


Step 6.

Bake for 55 minutes.


7. Cool and remove from pan. Slice and serve.
